MELON BALLS There is a wonderful device usually found in most good kitchen utensil suppliers that does the job of preparing melon into ball shapes really easy. Always dig deep into the flesh of the melon before swivelling the "baller" to cut the sphere from the fruit; otherwise you get very misshapen balls. The melon balls themselves can then be served in a sundae glass or in the hollowed out half melon case. STUFFED PEPPERS These make a great dish but I always struggled to clear out the inside of the pepper without damaging the outer shell. Then I realised a melon baller tool was perfect for scrapping out the seeds and bits without needing to cut deep into the whole pepper. Just slice off the very top and the melon baller reaches inside perfectly. STICKING FLAN CASES Years ago I confessed to an elderly aunt to being unable to make flan cases because whenever I tried to remove the flan from the metal flan case after cooking the flan always broke! She then passed on her helpful tip. Grease the inside of the flan tin just as you would any cake tin, BUT then add an equal amount of flour and castor sugar and gentle shake the tin until the flour and sugar mix covers the whole greased area especially in the deeper edge part. Then add your normal cake mixture for cooking. Once cooked and cooled for a few minutes invert the tin over a cooling rack and tap the base of the tin sharply. Hey presto out pops the flan case in one piece. |
